2-MINUTE PEACH PIE MUGCAKE- egg-, dairy- and refined sugar-free

A delicious, simple, summery mugcake for one, that makes a perfect lazy afternoon tea treat or dessert in a flash. Try serving it dressed up with a scoop of oat ice-cream or a dollop of coconut yogurt. It’s delicately spiced, moist, peachy fragrant and fruity… and it takes just a couple of minutes to make!

INGREDIENTS

80 ml (1/3 cup) ripe peach, diced
1/2 tsp coconut or birch sugar
1/4 tsp ground cinnamon
1/4 tsp ground ginger
A pinch of ground nutmeg

1 tbsp melted coconut oil
2 tbsp oat or nut milk
1/4 tsp vanilla extract

1 tbsp coconut or birch sugar
3 tbsp all-purpose flour (can be gluten-free)
1/4 tsp baking powder

DIRECTIONS

  1. In a microwave safe mug, combine the diced peach, 1/2 a teaspoon of coconut sugar and the ground spices.
  2. Microwave the fruit mixture for 30 seconds.
  3. Add the wet ingredients and stir to combine.
  4. Add the remaining dry ingredients and stir to combine.
  5. Microwave the cake batter for around 1-1 1/2 minutes.
  6. Remove the mugcake from the microwave and allow the cake to cool slightly before serving.

*Coconut yogurt, flaked almonds, peach slices, vanilla oat milk ice-cream and/or syrup are all lovely additions for serving, but entirely optional!
