Challenging times meet colder, darkening days. Simple, comforting delicious food to the (semi) rescue! This recipe is so simple that I hesitate to call it one, but in case there’s someone else out there wanting to make use of tomatoes in a cosy, utterly delicious and time-saving manner, here’s a way that we like to do them!

EASY ROASTED TOMATOES
INGREDIENTS
8-10 large tomatoes (any colour), washed and chopped into roughly 2.5cm (1-inch) pieces
A glug of extra virgin olive oil (around 1-2 tbsp)
A dash of balsamic vinegar (around 1/2-1 tbsp)
A shake of garlic powder (or 1-2 cloves crushed garlic)
Salt and pepper to taste
DIRECTIONS
- Preheat your oven to 200°C (400°F).
- Place the chopped tomatoes into an ovenproof baking dish, dress them with olive oil and balsamic vinegar and season with garlic powder, salt and pepper (to taste).
- Roast the tomatoes in your preheated oven until the edges are caramelised (around 25-30 minutes, or to your liking).
- Taste and add additional seasonings if desired. Serve hot or cold.
